How to make Putu cake

Kue Putu is a traditional Indonesian cake, this cake is very soft and delicious. Especially when still warm, savory flavor and sweetness mixed together. Well on this occasion the admin will share how to make a cake easy and simple putu.

Materials
400 grams of rice flour
150 grams of grated coconut (choose coconut that is not too old or too young)
150 grams of brown sugar (fine comb)
Water (to taste)
Salt (to taste, 1 tsp)
1 pandan Leaf
Bamboo Moulds (diameteris 3 to 5 cm)
Banana leaf (to taste)

How to make Putu cake
Boil the water in the pan and enter the salt and pandan leaves and stir briefly.
Stir until the salt is dissolved and the scent of pandan leaf is fragrant. Boil until the water is warm then turn off the flames.
Prepare another container for stirring dough. Pour the rice flour in it by pouring it out little by little water that has been heated before. While pour water, stir the dough until flour forming fine grains.
If the dough is finished fine grain, put the dough into the bamboo mold. Insert until the mold is filled in half. Next, also enter the brown sugar that has been finely combed. Cover it with a little more dough.
Next, prepare a boiler to steam the cake. Steamed for 10 minutes and while waiting for a ripe putu cake, prepare a baking dish or a plate that has been coated with banana leaves.

Ayam Goreng Mbok Berek is Indonesian legendary Fried Chicken Franchise Restaurants. It's like the Indonesian version of Colonel Sanders (KFC). Mbok Berek started her business in Jogjakarta, one of the most exotic places in Indonesia. Her real name was "Nini Ronodikromo". Her friendly name as "Mbok Berek" began from one of her children that often cried loudly (tantrum). In Javanese language they called such cry as "Berek-Berek". So from time to time people around her began to call her "Mbok Berek". The name surely brought her fortune until today, because of its uniqueness and easiness to be pronounced.

Mbok Berek Fried Chicken is actually an evolved version of Ayam Goreng Kalasan (traditional jogjakarta fried chicken). The business campaign slogan of Mbok Berek is "Ayam Desa Masuk Kota" or in English "Countryside Chicken Entering Town".

Ingredients:
  • 8 eschalots chopped
  • 3 cloves garlic chopped
  • 4 candlenuts
  • 1 teaspoon salt
  • 2 cups unsweetened coconut water
  • 2 teaspoons ground coriander
  • 1 piece fresh galangal bruised -- (5 cm)
  • 3 salam leaves - optional
  • 1 whole fresh chicken cut into 10 serving pieces
  • with a cleaver or 1kg chicken pieces
  • 2 cups oil for deep-frying


Fragrang Chilli Sambal (Sauce):
  • 4 large red chillies chopped -- (4 to 6)
  • 8 eschalots chopped
  • 2 cloves garlic chopped
  • 1 piece fresh galangal -- (1 cm)
  • 1 1/2 teaspoons finely chopped palm sugar
  • 1 teaspoon dried shrimp paste
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons vegetable oil
  • 1/8 teaspoon freshly grated nutmeg
  • 2 stems fresh lemon grass bottom 10cm only --
  • cut in half
  • bruised
  • 2 salam leaves - optional
  • 1/4 tamarind juice

Substitutes:
  • 1 large red or brown onion instead of eschalots
  • replace candlenuts with 4 raw unsalted macadamia nuts or 8 cashews
  • replace coconut water with 1 cup water and 1 cup chicken stock if desired
  • Use soft brown sugar instead of palm sugar


How to:
  1. Make the sambal by processing the chillies, eschalots, garlic, galangal, sugar, shrimp paste, and salt in a spice grinder.
  2. Heat oil in a wok or saucepan and fry ground mixture nutmeg, lemon grass and salam leaves 4 minutes.
  3. Add the tamarind juice, simmer 30-60 seconds.
  4. Remove lemon grass and salam leaves.
  5. Transfer sambal to four small sauce dishes and leave to cool.
  6. Prepare chicken by processing eschalots, garlic, candlenuts, and salt to a smooth paste, in a food processor, or spice grinder.
  7. Add a little of the coconut water if needed to keep the blades turning.
  8. Heat a wok for 30 seconds then add the ground mixture, coconut water, coriander, galangal, salam leaves, and chicken pieces.
  9. Bring to the boil, reduce heat and simmer uncovered until chicken is just tender 15-20 minutes.
  10. Drain chicken and dry thoroughly with paper towel. Heat a wok for 30 seconds, then add the oil.
  11. When very hot, deep fry the chicken, turning frequently until golden brown, 2 minutes.
  12. Drain and serve with the Fragrant Chilli Sambal.

300 GR Goat Ribs
Water 3 liters
1 Salam leaves
2 tsp salt

4 tbsp cooking oil
1 grain nutmeg, split
4 cm cinnamon
3 Grains of clove and 2 cardamom
3 Pieces of potato
1 carrot
2 Stalk scallion
2 stalk celery
7 Garlic seeds that have been puree
3 tbsp samine oil
1 onion
Beef flavoring to taste

Complementary materials

Fried Onions
Lime juice
Fried emping
Red Chili/Soto
Sliced scallion
Celery leaves
Cherry tomatoes

How to make


Cut the goat meat according to taste and goat bone 3-4cm long, put goat meat into boiling water. Cook with medium heat, input a greeting leaf, a little carrot and onion to neutralize the flavor of goat. Cook until goat meat is tender.
Strain the broth by 1.5 liters, when the fluid is reduced add enough boiling water, lift the leaves, carrots and scallion.
Heat oil in a wok, stir-fry onions, finely garlic, stir in cinnamon, nutmeg, clove and pepper. Stir until the aroma comes out, lift. Stir-fry the seasoning into the pan add the oil samin.
Cut carrots and potatoes according to taste, stir in the soup, cook until cooked vegetables and season with samin oil.
Stir in the SOP and the meat and bones into the food bowl. Sprinkle fried onions, sliced onions, celery leaves and lime juice, serve with sambal

1 1/2 pounds Fish Fillet
2 Shallots
Ginger 1 piece
2 Thai Chiles
1/2 tsp Turmeric
1/2 tsp Tamarind
2 tsp Soy Sauce (Dark)
2 tbsp Oil
Salt to taste
Pepper, black to taste

How to:
  1. Remove all skin from fish fillets, ensure that no bones remain and cut into serving-size pieces.
  2. Chop very finely the shallots, ginger, garlic and chiles, and pound these together with the turmeric powder, tamarind and soy sauce (or use a food processor).
  3. Heat the oil in a shallow pan and stir-fry the spice-paste for four to five minutes, then add the fish, cover with approximately one cup of cold water and bring to a boil.
  4. Lower heat, season to taste with salt and freshly ground black pepper and cook over a very low heat until the fish is done.
  5. Serve with fresh vegetables and rice.

 The dish is called Pop Chicken because cutlets of chicken are dipped and marinated in spiced juice.And then the cutlets are deep fried in very hot oil for only a few minutes ( you'll hear a loud “POP” sound when the chicken enters the oil).  


Ingredients:
 A free-range chicken (Not Purebred or Broiler) without heads and claws, cut into 4 parts

4 cloves garlic, grated

1 tsp salt

2 tbsp lime juice

300 ml coconut water

vegetable oil



Sambal (Chili Sauce):
 2 tbsp cooking oil

4 tbsp hot water



Blended Spice:

10 pcs of red chili, boiled

12 red onions, boiled

200 g red tomatoes, boiled

10 pcs petai (stinky beans), boiled

1 tsp salt





How To:
1. Marinate chicken pieces with garlic, salt, and lime juice. Leave it for an hour to absorb.

2. Boil the coconut water, add the chicken and the seasonings used for marinating. Cook until chicken is tender and juices run out. Lift the chicken.

3. Heat oil over medium heat. Fry the chicken for a very short time, remove and drain.

4. Serve hot with chilli sauce and boiled cassava leaves.

5. Sambal: Heat the oil, saute blended spices until fragrant.

6. Add water, stir until boiling. Lift.

How to:
  1. In food processor, blend jalapeno, ginger, turmeric, and salt to a paste.

  4. Add water and cook for 45 minutes.

2 pounds Medium Shrimp -- peeled and deveined
2 tbsp Oil
4 medium Red Chiles -- sliced
1 medium Shallot -- sliced
1 clove Garlic -- sliced
1 tbsp Palm Sugar -- or brown
1 tbsp Tamarind Paste -- dissolved in
1/4 cup Water
1/2 inch Ginger Root -- sliced
1 tsp Salt
1 small Tomato -- chopped
Rice


How to:
  1. Cook shrimp in 1 tablespoon oil over moderate heat for 2 minutes.
  2. Set aside.
  3. In food processor, blend shallot, garlic, chiles, sugar, tamarind liquid, ginger, salt and tomato to form a paste. Heat remaining oil in pan.
  4. Stir-fry paste over moderate heat for 3 minutes. Add shrimp, cook 2 minutes.
  5. Serve with rice.

  • 1 Medium Roasting chicken
  • 2 Onions
  • 4 Cloves garlic
  • 2 tsp Dark soya sauce
  • 3 tbsp Tauco (salted yellow beans)
  • 1 tsp Brown sugar
  • 1 tsp Paprika (optional)
  • 1/2 tsp Chilli powder
  • 1 tsp Ground ginger
  • 2 tbsp Vegetable oil
  • 1/2 cup Tamarind water
  • 1 cup Water
How to:
  1. This recipe calls for tauco which can be either salted black beans or salted yellow beans. Either can be found in a Chinese market as salted black bean or salted yellow bean sauce. Or you can track down Indonesian salted yellow beans and smash em up yourself. Thai markets carry them.
  2. Cut the chicken into serving pieces; wash, and dry. Slice the onions. Pound the garlic and the tauco into a smooth paste.
  3. Fry the onions in the oil for half a minute. Add the tauco, then the chicken. Stir well, so that every part of the chicken is coated with tauco.
  4. Put in the soya sauce and the rest of the ingredients. Cover, and simmer very gently for 45 minutes. Then take the lid off, and cook for a further 5 minutes to reduce the sauce.
  5. Serve hot.
  6. Makes 4 servings.

Lumpia semarang is a kind of eggroll with bamboo shoots, chicken & prawn filling. It was created by Chinese immigrants and local people in the city of Semarang in central Java. But now it has become a well known traditional food from Semarang, it's a nice portrait of how cultures could blend together and create a new innovation :)

Ingredients:
  • 3 carrots (thinly sliced like match sticks)
  • 1 pack bamboo shoot (thinly sliced)
  • 3 eggs (scrambled and chopped)
  • 3 green onions (thinly sliced)
  • 1 lb ground chicken
  • 1 onion (chopped)
  • 3 cloves garlic (chopped)
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • Black pepper and salt to taste
  • 1 pack spring roll wrapper
  • Chili sauce
  • Enough oil for frying

Preparation:
  • Stir fry onion until translucent then add garlic.
  • Add chicken, soy sauce, oyster sauce, salt and pepper.
  • Cook until chicken is cooked.
  • Add the vegetables and cooked for about 5 min, then add scrambled eggs
  • Cool the filling
  • Put one tablespoon onto a wrapper, wrap, then deep fry
Serve with chili sauce
